Directions:
Cook quinoa according to package directions. Mince garlic for dressing and set aside. Whisk together olive oil, apple cider vinegar, lemon juice, and salt and pepper in a small bowl and set aside . Place quinoa in a bowl and top with black beans, avocado, cherry tomatoes, red cabbage and cilantro. Finally add minced garlic to the dressing bowl and whisk together again. Pour dressing over quinoa bowl and toss until combined.
