Carrot Ginger Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 tablespoon grated fresh ginger
  • 1 teaspoons cinnamon
  • 1 teaspoons nutmeg
  • 2 tablespoons good quality maple syrup
  • 4 cups chopped carrots
  • 1/2 cup rolled oats
  • 1/2 cup freshly squeezed orange juice
  • Vegetable stock
  • Chopped fresh parsley for garnish 

Directions

In a large pot over medium heat, sauté onion, cinnamon, nutmeg and ginger in oil 3 minutes. Add carrots, oats, orange juice, maple syrup and just enough vegetable broth to cover ingredients. Bring to a boil, reduce heat, cover and let simmer until carrots are soft (about 20 minutes). Turn off heat and puree with immersion blender. Garnish with parsley and serve.
